Books and articles on the subject can be found below.


Scientific American honored Rubik's Cube on the cover of its March 1981 issue.  The sub heading reads "MAGIC CUBOLOGY."  The article was by Douglas Hofstadter and covered the fascinating mathematical aspects of the cube.


The subject of magic puzzles resurfaced in the July 1982 issue.   Hofstadter's Metamagical Themas column "Beyond Rubik's Cube" covered the proliferation and variations of the magic puzzle theme.


Both of the above articles (as well as the the rest of the Metamagical Themas columns) are reproduced in book form.  Each column also has an updated addendum.  I heartily recommend this intriguing book.


Rubik's Cubic Compendium is a very comprehensive book on the subject.  It includes Rubik's own account of the cube's invention, different solutions, and variations on the cube.
